The Chair Kates Playground

Puree beans (Bissara).



This recipe is prepared in many mountainous areas of northern Morocco, especially in winter, it consumes the breakfast, accompanied by olive oil, a glass of tea and barley bread.

Ingredients
  • 400 g of beans soaked the day before
  • 1 tsp chopped 1 tsp cumin
  • tsp salt 6 cloves garlic
  • 10 cl olive oil 1 tablespoon
  • Coffee paprika
  • 2 liters of water
  • olive oil paprika cumin

Preparation
To prepare the recipe Bissara of (mashed bean):

In a casserole beans and peeled garlic cloves. Cover with water and salt. Make
simmer for 30 to 45 minutes.
When the beans are cooked, put them in a blender to make a puree.
Let's remains liquid, add water if needed and still warm 5min.
Serve on a plate a little hollow, sprinkle with olive oil.
Sprinkle with paprika and cumin and serve hot.
